Our spot is right inside Hotel Radha Krishna, which is directly across from the Metro Mall in Kalyan East. Netivali Naka is a very busy intersection on the Shilphata Road, so there is always the sound of horns and people shouting. Vedchandra Veg Restaurant Llp is where we spend all our hours. It’s a typical restaurant environment where the kitchen is always hot and someone is always washing something. We focus on vegetarian food because that’s what we know how to do. The lunch rush usually starts around noon, and from then until three, it’s just a blur of orders and clinking plates. We don't have any fancy goals or slogans written on the walls. We just want to make sure the food tastes like it should and the tables are clean. The staff is local, and we all know the shortcuts to avoid the traffic when we go home. Sometimes the fridge acts up or a supplier forgets the tomatoes, and we have to scramble to fix it. It’s not a perfect operation, but we try our best to keep things moving. The mall across the street brings in a lot of people, especially on weekends when it gets really crowded. We spend our evenings prepping for the next day, chopping vegetables and cleaning the floors. It’s tiring work, standing on your feet all day, but seeing the dining room full makes it feel like we’re doing something right.
