Vaishanavi Poli Bhaji Kendra

We are over at Shree Gourinandan Chs, in Shop No.9 of the B Wing. This is near Manisha Nagar Gate No.2 in the Kalwa area of Thane. Vaishanavi Poli Bhaji Kendra is a small place, mostly just a kitchen where we make everyday food for people who do not have the time to cook at home. We spend a lot of our morning rolling out polis and stirring big pots of bhaji. It gets quite hot in the shop because the stove is always on, especially in the evenings when everyone is coming home from work and wants to pick up their dinner. We see a lot of office goers and families who live in the buildings around here. The 400605 area is quite crowded, so there is always noise from the street and the children playing nearby. We do not have much space for sitting, so most people just take their food in containers and go. We have a simple routine every day, starting early to get the vegetables fresh from the market. The shop is not very big, but we keep it organized so we can work fast. It is just basic, honest work. We do not use any fancy machines, just our hands and the usual kitchen tools. It is a local life here in Kalwa, and we are just a small part of the neighborhood.
