Nirmala Pooribhaji Kendra

Our small spot, Nirmala Pooribhaji Kendra, is located in Sagarika Apartment right in the middle of Kalyan City. If you know where the post office is, we are just behind it near Tilak Chowk. It is a very busy corner of Thane, especially in the mornings when everyone is rushing to get to work or catch a train. We start heating the oil very early because the pooris need to be ready by the time the first bus rolls past. It’s a small space, so most people just stand and eat or take a packet with them. We don't have a big menu, just the things we are good at making. The bhaji is always made with fresh potatoes and just the right amount of spice that people in Kalyan like. My wife helps with the rolling and I handle the frying and the customers. It gets very steamy inside the shop, but we are used to it by now. We’ve seen kids grow up coming here with their parents, and now they come by themselves. We don't have any fancy signs or advertisements, just the smell of frying dough that lets people know we are open. It’s a lot of standing on your feet all day, but as long as the customers keep coming back, we are happy to be here. We just keep our heads down and focus on making sure every poori is puffed up right.
