We run our kitchen from a kiosk in CBD Belapur. It’s kiosk number 37 on plot 71-73 in Sector 11. It’s a small space, so we have to be very organized with how we use it. Being in a commercial hub like CBD Belapur means there are always people around, especially during lunch hours. We see a lot of office workers and students coming through. The kitchen is compact but we have everything we need to get the job done. We don't have a big dining area, it’s more about the food being ready for people on the go. We spend most of our time prepping ingredients and cooking over the stove. It can get pretty hot in the kiosk during the summer months. We don't have a team of managers, just a couple of us doing the cooking and the cleaning. We chose this spot because it’s right in the middle of the action. You have to work fast when the rush starts and people are waiting. We don't use any fancy equipment, just the standard stuff that works. The rain sometimes makes things difficult for a small stall, but we stay open regardless. We’ve been part of the Sector 11 community for a while now. We aren't trying to change the world, just trying to serve decent meals to the people who work nearby. It’s simple, local, and it keeps us on our toes every single day.
