Our little shop is right next to Noorani Tower in Kausa, Mumbra. You can find us at Al Khatab Palace, unit 108. We focus on the Champaran style of cooking, specifically the handi dishes. It's a messy job sometimes with all the spices and the clay pots. The kitchen gets really hot, especially in the afternoons. We aren't some big restaurant chain with a hundred locations. It’s just this one spot in Mumbra where we do our thing. We spend a lot of time prepping the meat and getting the onions sliced just right. There is always something to clean or a pot to scrub. The smell of the coal and the spices is everywhere. It’s hard work, standing on your feet all day, but we like the routine. We get a lot of locals coming in, and we know most of them by name now. The traffic on the road outside can be loud, but once you're inside, it’s all about the cooking. We don't have fancy uniforms or a polished front desk. It's a practical setup meant for cooking good food. We've been here for a bit and the building is okay, though the elevators are sometimes moody. We just keep the fire going and make sure the handis are ready on time. It’s a simple business, nothing more to it than that. We just enjoy the work and the people who come to eat.
