Little Bite Dabeli

If you go to Kalyan West, you’ll find the Zojwala Shopping Complex on Agra Road. We have Shop No A9 there. It’s a small space, which is why we called it Little Bite Dabeli. Being in a shopping complex means there is always someone walking by. We spend a lot of time preparing the fillings and the buns every single morning. It’s a bit cramped inside the shop, but we have everything organized in its place. The Agra Road is always full of life, especially in the evenings when people come out to eat after work. We have a counter where we serve everyone who stops by. It’s not like a big restaurant with tables and chairs everywhere. It’s more of a place where you grab something quickly and keep moving. We try to keep the shop as clean as possible even though we are very busy. The complex has other shops too, so we have plenty of neighbors to talk to during the slower hours of the afternoon. Sometimes we run out of things like onions or bread and have to go get more supplies from the local market nearby. We don't have a big team, just a couple of us working the stove and the counter. It’s a simple routine. We open up the shutters, get the heat going, and start serving. It’s been our daily life for a while now. We don't have a fancy story. We just make dabeli in Kalyan.
