Kokan-D'Lite Llp operates out of Sector 46 in Nerul. Our address is D 5/3:16, which is pretty easy to find if you know the neighborhood. It’s a local operation through and through. We focus on the kind of food you find along the coast, which is what the name hints at. There isn’t a big boardroom here. It’s mostly just a kitchen space and a small area for us to handle the orders. We started this because we missed the taste of home and figured others in Navi Mumbai probably did too. Some mornings start really early when the fresh catch or the coconuts arrive. It’s a lot of manual work, scraping and grinding and getting the spices just right. The humidity in Nerul can be a bit much in the summer, but we’re used to it. We don't have a fancy website or a marketing person. Most of our customers just hear about us from their friends or neighbors. We’ve had some tough weeks where the electricity went out or we couldn’t get the right ingredients, but we always figure something out. It’s just us trying to make decent food that people actually want to eat. We aren't trying to change the world. We just want to make sure the next batch of curry tastes as good as the last one. It’s a small team here, and we all pitch in with whatever needs doing, even the cleaning.
