Gokul Franky & Chaat

Gokul Franky & Chaat is basically a small corner in Kandivali East where we make things people like to snack on. We have the big flat tawa for the frankies and all the bowls set up for the chaat. It’s nothing special to look at, just a counter and some space for people to stand around. Usually, the evenings are our busiest time. That’s when parents bring their kids after school or people stop by on their way back from work. We make sure the onions are chopped fresh and the chutneys are made every afternoon. If the chutney is old, the whole thing tastes wrong. We don’t have a big team, just a couple of us who have been doing this for years. You get fast at rolling the wraps and assembly when you have ten people staring at you, waiting for their turn. It’s a lot of standing, and the heat from the stove can be a bit much in the summer. But we like the noise and the chatter of the neighborhood. People tell us about their day while we’re preparing their food. It’s a nice way to spend the time. We don't use any fancy packaging, just plain paper or plates. It’s about the food, not how it looks on a phone screen. We’ve been here long enough that we know most of the people by their first names. It makes the day go by a lot faster when you’re talking with friends.
