We operate out of No2105 in the Lodha Amara complex. It’s the W-9 flat right on Kolshet Road in Thane. Global Biryani & Grills (Opc) Private Limited started because we really just enjoy the process of making good food. We aren't a giant chain. It’s just a small operation run from this flat. You can usually find us figuring out recipes or dealing with the logistics of getting spices and rice delivered. Kolshet is a busy area, and the building is quite tall, so we see a lot of people coming and going. We spend hours talking about marinades and how long the coals should stay hot. It’s a lot of trial and error. Some days the kitchen feels way too small for what we want to do. We don't have a team of fancy chefs in white hats. It’s just us and our passion for biryani. We get a bit tired of the paperwork side of things, but it’s necessary. We try to keep our feet on the ground. Living and working in Thane has its own rhythm. We’re just trying to make something that people in the neighborhood might enjoy. We don't use big words to describe what we do. We just cook and try to make sure everything tastes right. It’s a simple life, and we’re happy with it. Just doing our thing in flat 2105 every day.
