Our shop is at number 11 and 12 in the Durga Apartments, right on Louis Miranda Road in Margao. Being near the Saaj Hotel means we get a lot of people passing by, both locals and folks just visiting Goa. It’s a lively part of town, and we are right in the middle of it. The kitchen is always busy, and the smell of bread and sauce usually drifts out onto the street. We’ve got a decent amount of seating, but during the monsoon, everyone tries to pile in at once to stay dry. The staff here is mostly local guys who know the shortcuts around Margao to beat the traffic. We don't have much in the way of decoration, just the standard counters and some chairs that have seen a lot of use. It gets noisy with the ovens humming and the music playing, but it’s a good kind of busy. We spend a lot of time cleaning up after the lunch rush and getting ready for the dinner crowd. There’s no corporate polish here, just a lot of people working hard to keep up with the orders. Sometimes we run out of certain ingredients and have to make do until the next delivery truck arrives. It’s a practical, fast-paced environment. We just focus on getting the orders out as fast as we can without making too many mistakes. It’s a simple business at the end of the day.
