Simran Kitchen

Simran Kitchen is located right in the middle of the Okhla Industrial Estate Phase II, specifically at DSIDC Complex, 26. If you walk past during the morning, you can usually smell whatever we are prepping for the day. It’s a bit of a maze here in the industrial estate, and number 26 is just one of many units, but we try to keep our corner clean. The kitchen has been running for a while now, and the stoves are almost always on. It gets very hot in here, especially in July, but the exhaust fans do their best. We handle a lot of orders for the people working in the nearby factories who need a quick meal that tastes like it was made at home. There are big metal tables where everything gets chopped and sorted. I usually spend my time checking the stock and making sure the gas cylinders are full. The floor is tiled and we spend a lot of time scrubbing it at the end of every shift. It’s hard work, and my hands are usually tired by the evening. The DSIDC Complex is a busy place with trucks coming and going, so there is always some noise in the background. We don't have a fancy dining area, it is mostly about getting the food ready and out the door. It's just a regular kitchen doing regular work for the people around the Okhla area.
