Prabhat Dairies (P) Ltd. sits out on Dhulkot Road in the Sangrur district. It is a quiet enough area compared to the main town, but the road gets a lot of truck traffic during the day. We start our work very early, often while it is still dark outside, because that’s when the milk arrives. The air is usually cool then, which is nice before the Punjab heat really starts to pick up. Our building is a sturdy one, mostly concrete, with a lot of pipes and cooling units. We don’t have a big sign or anything flashy. Most people in the district just know us by the location. Inside, the floors are always wet because we are constantly washing things down. It’s important to keep everything clean in a dairy. The staff mostly consists of local guys who know their way around the tanks. We have a small office with a few old desks and a lot of logbooks. We don't use fancy software for everything; a lot of it is still written down. Sometimes the trucks get delayed by fog in the winter, and that throws off our whole schedule. We just deal with it as it comes. It’s not a glamorous job, and it can be physically tiring. We don't have a marketing department telling us what to say. We just process the milk and keep moving. It's a regular part of life here on Dhulkot Road.
