Doughman

At Doughman, we are based out of Mundhwa on Shivaji Road. The day starts very early for us, usually when most people are still sleeping. You can hear the sounds of the road starting to wake up while we are already busy inside. It’s a lot of manual work, lifting heavy bags and making sure the machines are running. The air in the shop usually smells like whatever we are working on that day. It’s not a big corporate bakery. We have flour on our clothes by ten in the morning. Shivaji Road gets pretty busy with commuters later on. We see a lot of people passing by on their way to work. Some stop in, some don't. The shop isn't very large, so it can get a bit hot when everything is running. We don't have a fancy interior design. It’s just a place where work gets done. Sometimes we make mistakes and have to start over. That’s just how it goes with this kind of thing. We’ve been in Mundhwa for some time now. Locals know our name, but we don't do much to promote ourselves. We just focus on the daily tasks at hand. If you are ever on Shivaji Road, you’ll probably see the sign. It’s a simple life, but it keeps us busy. We like being part of the neighborhood here. We just keep the ovens going and try to make sure everything is ready by the time the morning crowd arrives. It takes a lot of effort.
