Our business, New Sangam Cooking Contractor And Caterers, is based out of Naini. We spend most of our time in big kitchens or setting up stalls at different venues around the area. It is a lot of heavy lifting with those massive cooking pots and gas cylinders. Naini can get really hot, especially when you have four or five large burners going at once, but we just get on with it. We don't have a fancy office for meetings; usually, we just talk to people at their homes or at the site where the event is going to be. Our storage space is filled with stacks of plates, spoons, and giant serving trays that we keep scrubbed and ready. When we aren't out at a function, we are usually checking our supplies or fixing up the transport van. It’s not the kind of work where you have a set schedule. Sometimes we are up at four in the morning to start a lunch prep, and other times we are packing up in the middle of the night. We don't use a lot of big words or fancy promises. We just show up, do the cooking, and make sure there is enough food for everyone who was invited. The community here knows us by word of mouth mostly, and we’ve been part of a lot of local celebrations over the years.
