Methalika Sweets

At Methalika Sweets in Anisabad, Patna, the day usually starts while it's still dark. We have to get the milk boiling and the sugar syrups ready before the morning crowd arrives. Being in the 800002 area, we get a lot of people stopping by for a quick snack or to take a box of treats home for a celebration. The air inside always smells like cardamom and frying ghee. We make a variety of traditional items, and they are usually laid out in the glass display cases near the front. The floor can get a bit sticky sometimes, but we try to scrub it down when we have a break. It's a lot of heat from the large stoves in the back where the cooking happens. We wear simple aprons and spend most of the time on our feet. Sometimes people come in just to ask for directions, and other times they want fifty boxes for a wedding. We don't have a big corporate team; it's just us working the counters and the kitchen. The chairs for customers to sit are just basic ones, nothing fancy. We’ve been in Anisabad long enough to know the local tastes. Some people like their sweets extra soft, and others want them crunchy. We just make what we know how to make. It’s a messy, busy, and tiring job, but it’s what we do. When the shutters go down at night, we’re usually exhausted but ready to do it again tomorrow.
