Kalu Ram Chat Vale is right in the Bhajanpura Main Market at C 214/4. If you know the market, you probably know where we are because of the smell of the spices and the frying. It is a very busy spot, especially in the evenings when everyone comes out to eat. We don't have a big seating area or anything like that. It’s mostly just people standing around or taking stuff home in packets. We spend all day prepping the ingredients, chopping things up, and making sure the chutneys are ready. The heat from the stove is always there, and even in the winter, it stays warm behind the counter. We have been doing this for a long time and the recipe hasn't really changed because people like it the way it is. It gets very loud with the traffic passing by and customers shouting their orders. Sometimes it feels a bit overwhelming when twenty people are all waiting at once, but we just keep serving one plate after another. It is a simple business based on food that people enjoy. We don't bother with fancy plates or decorations. The focus is just on the taste and making sure there is enough for everyone who shows up. It’s a lot of standing on your feet, but it’s good to see the same faces coming back day after day. Selling chat in a busy market keeps you on your toes.
