Our little pizza shop is tucked away on Street Number Two in Kartar Nagar. If you know this part of Delhi, you know how tight these streets can get, especially when the delivery bikes are coming and going. We started this place because people around here wanted something quick to eat. The kitchen stays pretty warm because of the big ovens running all day long. We spend a lot of time kneading dough and chopping up vegetables on the back counter. It is not a quiet place at all, there is always the sound of the phones ringing or the boxes being folded up for the next order. Sometimes we run out of specific toppings by the end of the night, which is annoying for everyone, but we do what we can with what is on the shelf. The guys who ride the bikes know every pothole and shortcut in the 110053 area. It is hard work, especially when it rains and the streets get messy. We do not have much of a lobby, just enough room for a couple of people to wait for their takeaway. We focus on getting the pizzas into the boxes and out the door as fast as the traffic allows. It is a bit chaotic during dinner time, but we managed to find a rhythm that works for our team. We are not trying to be anything more than a reliable spot for a hot meal. We just keep the counters wiped.
