Down at 4115 Naya Bazar, things start moving very early in the morning. Pari Foods Pvt. Ltd. is right in the middle of all that chaos. If you’ve never been to Naya Bazar, it’s a place filled with the smell of grain and the sound of heavy trucks unloading. Our space is mostly taken up by stacks of bags and the small office area where we keep the ledgers. It gets very dusty, especially when the wind picks up, so everything is usually covered in a fine layer of flour or spice dust. We spend our days checking quality and making sure the bags are weighed correctly. It’s heavy work and my back definitely feels it by the time evening rolls around. There isn't much room to move around in the warehouse part, so you have to be careful where you step. We have a small crew of guys who have been with us for years. We don't use any fancy systems, just old-fashioned hard work and keeping our word to the people we buy from and sell to. Sometimes the rain makes the street a muddy mess, and that makes loading the trucks even harder, but we manage. It’s a traditional way of doing business in a very traditional part of town. We aren't trying to be the biggest, we just want to make sure the food we handle is good and that we get home on time. The market is loud but it is home.
