We’re located on Janpath, which is a busy street with a lot of history. Inside our doors, things are a bit different than the chaos of the main road. We spend a lot of time on the basics, like making sure the dough is right and the vegetables are fresh. It’s a lot of kitchen work that isn't very glamorous. We’ve got a team that stays pretty focused on the tasks at hand. We aren't interested in being the trendiest place in Delhi. We just want to make food that reminds people of why they like eating out in the first place. Sometimes the kitchen gets a bit too hot, or we have a disagreement about how a dish should look, but we always work it out. The building we’re in has its own quirks, like leaky pipes or flickering lights every now and then. We just deal with it. It’s about the daily grind of prep, service, and cleaning. We don't have a big marketing team telling us what to say. We just show up every day and do the work. It’s a practical way to live. We like the people who come in and the fact that we get to keep doing this. It’s just us, making food on Janpath.
