Uday Foods is tucked away on Holker Lane, just behind Kulkarni Garden. It’s a quiet spot, but it gets busy once we start the cooking and packing. We make various food items that we send out to local shops. The kitchen isn't huge, but we have everything arranged so we can work efficiently. Every morning starts with the smell of spices and the sound of large pots being moved around. We don't have a storefront where you can sit and eat; it’s more of a production space. We spend most of our time on prep work, like chopping vegetables or grinding grains. There’s always a list on the wall of what needs to be delivered by the afternoon. We have a few delivery guys who come by around noon to pick up the fresh batches. Sometimes the weather makes it hard to keep things dry, especially during the rains, so we have to be extra careful with storage. It’s a family-run kind of thing, so everyone chips in where they can. We don’t spend money on advertising; people just know our stuff from the labels in the stores. The lane is a bit hard to find if you’re not from around here, but it’s a good place for us to work without too much distraction. We just focus on making the food the way we always have, using the same old recipes that have worked for us for years and years now.
