Chanda Special Samose

We have a little shop on the block road in Bhimtal, right near the ramleela ground. If you are from around here, you probably know us for the samosas we make every day. We start the prep work very early, usually while it is still cold and dark outside. It is a simple process of making the filling and the dough, but it takes a lot of time to get it right. We don't have a big dining area or anything fancy like that. Most people just grab their food and keep walking or stand by the road to eat. It is a very local spot, and we like it that way. We don't use any fancy equipment; we do everything by hand just like it has always been done. The weather in the Nainital area can be quite chilly, so having something hot and fresh out of the oil is always popular with everyone who passes by. We spend a lot of time cleaning the pans and the counter because we want to keep things decent. We don't have a marketing plan or any corporate goals. We just want to make enough snacks for everyone who comes by our shop. Sometimes we run out early and have to tell people to come back tomorrow, which is a bit of a shame but that's how it goes. It’s just a small family business, and we are proud of the work we do here on the block road every day for our local neighbors.
