Resoighar

The kitchen here in Hidustan Colony stays busy most of the time. We are right on Amravati Road, so there is always noise from the trucks and cars passing by. Being right beside the Nilkamal Flats means we see our neighbors every day when they go out for work or come back home. I start my day by checking the vegetables that come in early. Sometimes they are good, and sometimes I have to send some back. The stove is almost always on and it gets quite hot inside, especially during the summer months in Bharat Nagar. We don't have a big fancy setup, just some heavy pots and a few people who know how to cook. My apron usually has some flour or turmeric stains on it by noon. We don't really do anything flashy. It's just about getting the food ready and packed into those steel containers. Sometimes the delivery boys arrive all at once and the small space feels even smaller. I keep a radio playing in the corner to have some music while we work. The menu changes a bit based on what is fresh at the market. Most people know us by the smell of the spices drifting out onto the street. It’s a lot of hard work standing on your feet all day. We wash a lot of dishes too. It's just a regular local place where we spend our hours making sure the food is done right.
