Down in Malad East near 7 Bunglows, you’ll find Shree Ambika Hotel & Caterers. It’s been our workplace for a long time now, and the walls have definitely seen better days. The kitchen gets really hot in the afternoons, but that’s just part of the job when you’re dealing with big pots and pans all day long. We handle a lot of different orders, some small for just a few people and others that take up the whole weekend. Our space isn't huge, so things can get a bit cluttered with bags of rice and crates of vegetables when we have a big catering job going out the door. We usually have the radio playing in the back to keep things moving. The guys here know the routine by heart, though someone always manages to misplace a ladle or a clean towel at the worst time. Malad East is a lively place to be, and there’s always something happening outside on the street to distract us. We get people coming in asking about menus while we’re busy chopping onions. Sometimes the delivery van gets stuck in the narrow lane traffic, which is a real headache for everyone. We don’t spend much time on decorations or looking polished, we just focus on the heat of the stove and getting the food packed up. It’s hard work, standing on your feet for ten hours, but it’s what we do. The regulars know where we are.
