San Qi (Four Seasons Hotel)

We’ve got the place right there on the ground floor of the Four Seasons Hotel on Dr E Moses Road. It’s a big building in Worli, and being near the Nehru Science Centre means there are always people around. Mumbai is a fast place, and working here you really feel that. The cars never seem to stop moving outside on the road. We get to work and start the prep, which takes up most of our morning. Since we are inside the hotel at 1/136, we see a lot of travelers as well as locals who just want a meal. The space is large but we try to keep it feeling like a normal workplace. We don't use a lot of big words or try to act like something we aren't. It’s just a job at the end of the day. The kitchen is where most of the action is, and it can get pretty hot back there during the dinner service. We spend a lot of time cleaning the glass and making sure the entryway looks decent. It’s not always perfect, sometimes things break or we run out of something, but we just deal with it. Worli has a specific kind of energy and we’ve become a part of it over time. We just open up and wait for the day to start. It’s a long day usually, but we are used to the rhythm now.
