Rangila Wadapan

We are over in Borivali East on Khandala Lane. Rangila Wadapan is just a small stall really. We have the big kadai for frying the wadas. It stays hot all day. Khandala Lane is quite narrow, so you can always smell the garlic and potatoes when you walk by. Borivali East is a fast place. People are always running to catch the train or a bus. We try to keep the pav fresh and the wadas hot. Sometimes we run out of green chillies and have to send someone to the market quickly. The rain makes things difficult because the lane gets muddy. We have a small plastic sheet to keep the water out. It's not a big operation. We just wake up early to boil the potatoes and mash them up. The spices get in your eyes sometimes. People stand around on the street corner eating. We don't have a menu on the wall. Everyone knows what we have. Khandala Lane has a few other shops, but we’ve been here for a good bit of time. Borivali East feels like home to us. The stove is old and makes a bit of noise, but it works fine for what we need. We just keep frying and serving until the basket is empty at the end of the day. It’s a messy job but we have been doing it this way for as long as I can remember.
