If you come looking for us, you have to find Deep Plaza Industrial Estate in Kurla West. We are on the first floor in unit 108. It is right next to the Kherani Industrial Estate, which can be a bit confusing for delivery drivers who are new to the area. The building isn’t much to look at from the outside, but it’s where we do all our flavoring work. When you walk up the stairs, you can usually smell whatever we are mixing that day. Sometimes it is sweet, like vanilla, and other times it is something much sharper. The space is a bit tight with all the containers and mixing equipment we have squeezed in there. We spend a lot of time measuring out ingredients and checking the labels. It is repetitive work but it needs to be done right. The windows stay shut most of the time to keep the dust out, so it can get a bit stuffy. We have a couple of fans going all day long to keep the air moving. Kurla is a very crowded place, so just getting in and out of the estate takes some patience. There’s always someone double-parked or a handcart blocking the way. We’ve been at this unit for a good while now and we know the shortcuts through the side streets. It is a busy little spot but it works for what we do.
