Our place is located in Room No. 3 and 4 of the Shamabai Pandey Chawl. If you know S.V. Road in Dahisar East, you know it is always moving and shaking. We have been operating out of the Ambawadi area for a good while now. It is a tight space to work in, but we make it work for the food service business we run. Most of our mornings start way before the sun is even up. There is a lot of chopping, cooking, and packing going on in those early hours. You can hear the buses and rickshaws outside on the main road all day long. It is definitely not a fancy corporate kitchen, just a couple of rooms in a chawl where we get things done properly. We know all the neighbors around here. Sometimes the heavy rain makes it hard to get our deliveries out on time, but we try our best to manage. Mumbai 68 is home for us. We do not have a big flashy sign or anything like that. People just know where we are by the smell of what is cooking or by seeing our crates piled up. It is honest, hard work. We spend most of our day on our feet. The space is small so you have to stay organized or you will trip over someone else. We have got a few burners going and plenty of containers to fill. It gets hot in there, especially in the summer months, but that is just how it is.
