Being on the second floor here in Khar can be a bit of a trek for some, but we have been at 355 Lakshminarayana for a good bit of time. The stairs are narrow and sometimes the light in the hallway flickers, but once you get inside, it’s just us doing what we do every day. Mumbai gets so humid, especially in the afternoons, so we keep the windows open as much as we can to catch a breeze. We focus mostly on parathas because that is what we are set up for. The kitchen gets hot, especially when all the tavas are going at once. We buy our vegetables and flour from the local guys nearby. Sometimes we run out of something and have to send one of the boys down to the market quickly. It is a bit chaotic during the lunch rush, with everyone talking at once and the smell of ghee everywhere. We aren't trying to be some five-star place with white tablecloths. We just have our tables and the menu we’ve had forever. If the floor is a little scuffed, it is because a lot of people walk on it. We just keep our heads down and keep rolling out the dough. It’s a job and we like being here in this part of Khar. Most people who come in live or work right on this street. The sink leaks a tiny bit sometimes but we put a bucket under it and just keep moving.
