Nixo Kitchen

Our kitchen is at 14-A, Shell Colony Road in Chembur, right opposite the main junction. It is not a very big space, so we have to be careful not to bump into each other when we are busy preparing the day's orders. The stove is almost always on, which makes the whole place feel like a sauna during the summer months. We have a small radio that usually plays some old songs to keep us going while we are prep-cooking. The floor is that old-fashioned green stone that stays cool even when the rest of the room is boiling. We spend a lot of time packing food into those plastic containers and taping them shut. Sometimes we run out of tape and someone has to run across the street to the general store to get more. The view out the window is just the busy road and some trees, but it is nice to look at when things slow down for a minute. There is a dog that hangs out near our door, and we usually give him some scraps at the end of the shift. We are not trying to be anything fancy or high-end. We just cook what we know and try to get it out on time. The clock on the wall is five minutes fast, but we leave it like that so we feel like we have more time than we actually do. It is just our way.
