Working up on the 3rd floor of the Palladium Mall means we see a lot of people every day. Lower Parel is always moving, and the mall gets really packed on the weekends. We’re tucked away at T-16, right in the middle of all that shopping. It’s a busy spot for Mainland China Asia Kitchen. The kitchen is usually humming with the sound of woks and timers going off. We spend a lot of time prepping the sauces and getting the ingredients ready before the mall even opens its doors. It’s quite a climb if the elevators are full, but people find their way to us. We try to keep things organized, though during the dinner rush, it can get a bit chaotic. Our staff mostly just worries about getting the plates out hot. We’ve been at 462 Senapati Bapat Marg for some time now, and we’ve seen the mall change quite a bit around us. It’s a lot of energy in this part of Mumbai. Sometimes we have a waitlist, which is just how it goes when things get busy. We don’t do anything too flashy, just stick to the recipes we’ve been using. You get a mix of families and people taking a break from work. We just keep our heads down and do the work. It’s a good spot to be in, even with all the noise from the mall crowds.
