Folksy Food is tucked away in the Neelkanth Business Park at Mumbai Central, specifically in unit 34/36. Being in a business park means we are surrounded by people working in offices all day. We started this because we wanted to provide real food that doesn't taste like it came out of a factory. The kitchen is the heart of our place, and it stays quite hot and humid in there once the stoves are turned on. You can usually hear the sound of knives hitting cutting boards or the sizzle of something in a pan from the hallway. We aren't professional chefs with tall hats; we are just people who know how to cook the way things are done at home. Sometimes we run out of a certain ingredient and have to change the menu at the last minute, which is just how it goes when you’re dealing with fresh stuff. The morning is always a rush to get everything prepped before the lunch crowd starts arriving from the nearby offices. By two o'clock, we are usually exhausted and take a break to sit down and eat whatever is left over. The space is functional and clean, but it’s definitely a working kitchen, not a fancy restaurant. We do our own cleaning and we buy our vegetables from the local market. It’s a lot of physical work, standing on your feet all day, but we prefer it to sitting behind a computer screen in one of the offices upstairs.
