Our college is tucked away on Kastha Danga Road in Kolkata. It’s a place where we teach students all about the hotel business and how to cook different dishes properly. The kitchens get really hot during the practical lessons and there is always the constant sound of knives chopping or metal pots clanking together. We spend a lot of time showing people how to set tables correctly and clean rooms the right way for guests. It’s a practical kind of school so the students are always doing something with their hands instead of just reading books. We don't have many fancy classrooms with high-tech gadgets but we have all the tools we need to learn the trade. The building at 11/2 is usually full of a lot of energy from early morning until the evening. We try to keep things organized but with so many students running around it can get a bit chaotic sometimes. We've been in this part of West Bengal for a while and we know how hard the hospitality industry can be for newcomers. We just try to give the kids a good start so they can find steady work in hotels later on. There’s a lot of washing up and scrubbing to do at the end of every single day. We don't use big words or complicated theories here, we just show them how the work actually gets done. It’s a busy life here in Kolkata but we like it.
