Kaafila Restaurant

We’ve been running this place at City Centre for a while now. If you know Salt Lake, you know how Block-Dc gets on the weekends, especially around the mall area. It’s always a bit of a rush here, but we try to keep things moving. The restaurant sits right on the third floor, so we get a decent view of the people walking by down below. It’s not a fancy corporate setup or anything like that. Just a kitchen and a bunch of tables where people sit down to eat after a long day of shopping. Most of the folks who come in are regulars from the nearby offices or families out for a meal. We spend most of our mornings getting the kitchen ready and making sure the supplies arrived on time. Sometimes the delivery trucks get stuck in traffic near the City Centre gate, which is always a headache for us. We just focus on the food and making sure the plates are clean. It’s a lot of work, honestly. Between managing the staff and making sure the AC is actually working during the summer months, there isn’t much downtime. We don't have some big fancy story to tell. It’s just a restaurant in Salt Lake City where we show up every morning, open the doors, and start cooking until the mall closes down for the night. That’s pretty much how it goes for us every day and we've gotten used to the rhythm of the place.
