Our business is tucked away on the second floor of the Mangalam-A building, which is at 24 Hemanta Basu Sarani. It is a bit of a climb if the lift is acting up, which happens more than I’d like to admit. Being at number 305 means we are right in the middle of all the office noise and hustle of the city. We have been in this spot for a few years now. The space is a bit cramped because we have to fit the ovens, the cooling racks, and all the bags of sugar into one area. It gets really hot in the middle of the day, so we usually have a fan pointed right at us while we work. We don't really have a place for people to sit down and eat. It is more of a production space where we get things ready for delivery or for people to pick up and take back to their desks. We spend a lot of time checking the clocks because baking is all about timing. If you leave something in for two minutes too long, it is ruined. We drink way too much tea to stay focused during the early morning shifts. It’s not a glamorous job, and my hands are always covered in something, but it is what we know. We don't use any big words to describe what we do. We just bake and hope the deliveries get out before the traffic gets too bad. It's a living.
