Biscotti

Biscotti is run out of a flat in Purbachal. Specifically, we are at Flat No - 302, 323 Kalitala Main Road in the Kasba area of Kolkata. It’s not a shop on the ground floor with a big glass window. Instead, it’s more of a home-style setup where we handle everything. Being in an apartment building means we have to be careful about not making too much noise or bothering the neighbors. The smell of baking usually fills the hallway though. We spend most of our time in the kitchen area. There are flour bags in the corner and cooling racks taking up most of the table space. It’s a small operation, just a few of us making sure everything tastes right. We don't have a team of delivery drivers or anything like that. Often, we are the ones taking the calls and then packing the boxes ourselves. Kasba is a busy part of Kolkata, and getting ingredients delivered can be a bit of a struggle with the traffic on Kalitala Main Road. We started this because we liked making things, and it just grew from there. It’s definitely not a corporate bakery. Sometimes the oven acts up or we run out of boxes, but we make it work. It feels more like a hobby that got a bit out of hand.
