Salt Lake City is quite big, but our little corner at FC 45 feels much smaller. Dui Burir Hessel is basically what the name says. It is a kitchen run with the kind of food you expect from the elders in the family. We aren't trying to be a five-star hotel with white tablecloths. Our place is more about the pots on the stove and the steam in the air. Living in Kolkata, people know their food, so we just stick to what we know. We spend a lot of time cleaning vegetables and getting the fish ready every morning. It is a lot of work for two people, but we have been doing it long enough that we have a rhythm now. Some days are harder than others, especially when the humidity hits Salt Lake, but the kitchen stays busy. Neighbors pop in to see what is cooking, and sometimes they just stay to chat for a bit. It feels more like a house than a shop most of the time. We don't do flashy ads or anything. People just find out about us from their friends or by walking past the building. If you are near the FC block, you might smell something good and that is usually us. We just keep our heads down and keep the stoves lit every day for the community.
