We are located over at 30 Kenaram Ganguly Road. It is a busy little spot in Kolkata, especially when the sun starts coming up and the traffic begins to move. Most days, we are just busy with the dough, mixing everything by hand and making sure the fryer is at the right temperature. It gets pretty hot in here, especially during the summer months in West Bengal. You can usually find one of us cleaning up flour from the floor or stacking boxes near the door. The address is LP 97/6, which some people find a bit confusing when they first try to find us. We have been in this 700008 neighborhood for a while now. It’s not a fancy place at all. Just some tables, the smell of yeast, and a lot of work. We spend a lot of time arguing about the sugar glaze or whether the coffee machine is acting up again. The shutters go up early and we stay until the last batch is gone or we are too tired to keep standing. Sometimes the rain leaks a little near the back entrance when it pours, but we just put a bucket there and keep going. It is just a regular shop where things get messy and the floor is never quite as clean as we want it to be. We just handle the daily stuff and try to keep things moving along.
