Calcutta Bakery Private Limited is tucked inside the Emami Tower. We are in the retail block, unit 04-3 to be exact. That is part of the Emami City 2 project on Jessore Road. This part of Kolkata is always growing with new apartments and shops popping up everywhere. Our spot in the tower is where we handle all the daily baking. The ovens get hot and the air gets thick with the smell of yeast and sugar. Since we are in a retail block, we see a lot of people walking by from the nearby buildings. Jessore Road is usually packed with cars and buses, so getting our ingredients delivered can be a bit of a headache sometimes. We have been working out of this space for some time. It is a clean, modern building which makes a difference when you are dealing with food. We have a few tables out front but mostly people just grab what they need and go. The staff here are mostly local folks who have been in the baking business for years. We aren't fancy; we just focus on getting the cookies and breads done right. Sometimes we run out of certain items by mid-afternoon if it’s a busy day. We don't worry too much about it, we just bake more the next day. It’s a steady kind of life here at the tower.
