Shalimar Roller Flour Mill

If you ever come down to Siddiamber Bazar, you already know how crowded and loud it gets. Our mill, Shalimar Roller Flour Mill, is tucked away in Ashok Market at 15-1-503/A/9. It is a bit of a tight squeeze with all the other shops and people rushing around us. We have been in this spot for a long time now. The smell of ground wheat is just part of the air here. I think I have inhaled more flour than actual oxygen over the years. We have to start very early in the morning because the market gets completely jammed up by ten. If the grain trucks don't arrive by then, they are stuck in traffic until the evening. It is a lot of heavy lifting and my back really feels it when the weather gets damp. We have these big rollers that hum all day long. It is a deep sound that you can actually feel in your feet while you work. Customers come in looking for specific types of grinds, and we just do our best with what the machines can handle. We don't have a big fancy office, just a small wooden desk where we keep the cash and the receipts. It is usually covered in a thin layer of white dust. We take turns getting tea from the little stall across the lane. It is messy and it is hard work, but we just keep going.
