Jumboking

We have the Jumboking stall over at the Narayanguda X Roads in Hyderabad. It is right there in the Totaram House Complex, right next to the flyover. If you know that intersection, you know it is one of the busiest and loudest spots in the city. We are constantly dealing with the sound of horns and the wind from the cars and buses rushing by. Our work is all about speed because most of the people stopping by are trying to catch a bus or heading to the metro station. We spend our entire shift assembling orders as fast as we can. There isn't much room for sitting down, so it is mostly a take-away operation. We go through an incredible amount of wrappers and napkins in a single afternoon. The morning is spent getting the patties and buns ready and making sure the sauce containers are filled up. It is a small space, so we have to stay very organized or we would be tripping over each other all day. The heat from the cooking equipment combined with the Hyderabad weather makes it pretty warm inside the stall. We take turns taking short breaks just to get a bit of fresh air. It isn't a fancy job, but we like seeing the regulars who stop by every day on their way home from college or work. We just keep the grill going and try to keep the line moving.
