Our bakery is down at 7-4-112/1 on Madhuban Colony Road in Kattedan. You can usually smell the place long before you see it. Baking biscuits all day means the air around the building is always sweet and warm. It’s a hot job, being near the ovens for hours at a time. We have a crew that works in shifts to keep the production moving. We start pretty early in the morning when the air is still a bit cool. The machines are loud and they never seem to stop running. We make a variety of biscuits, mostly the simple kind that people like to have with their tea in the morning. It’s a lot of physical work, moving heavy bags of flour and sugar around the floor. We don't have a fancy storefront for people to visit. The building is just a functional space for making things. Most of our biscuits get loaded into trucks and sent out to local shops and distributors. We’ve been here in Kattedan for a long time now. The neighborhood has changed quite a bit, but we’re still doing the same work every day. Sometimes the dough doesn't turn out quite right and we have to adjust things on the fly. It’s a hands-on business and we’re usually out on the floor making sure the belts are running and the ovens stay at the right temperature for the bake.
