Our place is on the first floor of a building on Amravati Path in Ulubari. It’s not a ground-floor shop, so you have to walk up the stairs to find us. We spend most of our time dealing with different types of food products and concepts that we’re working on. The kitchen area is usually the busiest part of the day, with a lot of smells and steam coming out. It’s not a restaurant where you sit down and order from a menu. It’s more of a workspace where we figure things out. Sometimes the delivery trucks have a hard time finding the exact spot on Amravati Path because the lane is a bit narrow. We end up going down to the street to wave them in. It’s a bit chaotic in the mornings when the supplies arrive. We’ve got bags of flour, spices, and all sorts of things stacked up in the corner. We try to keep things organized, but when you're busy, things tend to get a little messy. The staff here is small, and we’ve all known each other for a while. We don't wear uniforms or anything like that. We just wear what's comfortable for working in a warm kitchen. Ulubari is a busy part of town, so there's always something going on outside. We just keep our heads down and focus on getting the food right. It’s hard work, but we enjoy it. Most days we are just experimenting with new ingredients and trying to stay ahead of the orders.
