Bikanervala here at the Gurgaon H.O in Sector-12A is a pretty busy spot inside the Huda Market. We are located at units 26 and 29 on Old Delhi Road and there is almost always a truck unloading something nearby. It is a big operation with a lot of people moving around. One side is mostly the sweets behind the glass and the other side is where the hot snacks are being fried. You can smell the ghee from the street before you even see the sign. The market is always loud and there are cars everywhere, so it gets a bit chaotic during the festival seasons. We have a lot of staff in uniforms trying to keep up with the orders for dhokla and kachoris. The counters get sticky with syrup and we are constantly wiping them down. It is a lot of work to keep everything stocked because people buy boxes of sweets by the dozen. We have been at this Old Delhi Road location for quite some time now and it feels like the heart of the market. The kitchen in the back is huge and it never really stops. Even late at night, there is someone cleaning a vat or prepping dough for the next morning. It is just a local staple where everyone stops by for a quick bite or some snacks for home.
