Our shop is over at Number-4/9 in Ratan Garden. It’s right near the Easy Day at New Colony Mod in Gurgaon. A1 Muradabadi & Hydrabadi Chicken & Mutton Biryani is a bit of a long name, but we just focus on the food. We’ve got the big deghs set up every day. Cooking biryani is what we do, and we’ve been doing it for quite some time now. The 122001 area is always moving, and we try to keep up with the pace. It’s a small shop, so you might miss it if you aren't looking, but the smell usually gives us away. We don't have a big staff. It's just a few of us working together to get the meat and rice ready. We don't go in for fancy plating or decorations. The food goes into a container or on a plate, and that’s it. We know a lot of the people who come by because they live just around the corner in New Colony. It’s a practical way to earn a living. We have to be careful with the spices to get that Muradabadi and Hydrabadi style right. It takes a lot of patience and standing in the heat. Sometimes the shop gets a bit cramped, especially in the evenings when everyone comes by after work. We just keep serving until the pots are empty. It’s a local business, plain and simple, run by people who like to cook and serve their neighbors.
