The Fry Man

Our little shop is number five in the Kshitij Complex over in Vaishali Sector 4. It’s a busy little corner of Ghaziabad, right across from Sarvoday Hospital. Because we are in the main market, there is never a dull moment. You see all sorts of people walking by, from folks visiting the hospital to people doing their daily shopping. We have been here for a while now, just doing our thing with the fryers. It gets quite warm inside, especially when we have everything running at once. The space is small, so we have to stay pretty organized or we’d be tripping over each other. It’s a simple setup with a counter and not much else. We don’t really go in for any of that corporate style of doing things. It’s just a few of us making food as fast as we can when the lunch rush hits. The street outside is always packed with cars and rickshaws, so it can be a bit of a headache to get around, but being in the middle of the market is good for business. We usually stay open until fairly late because the area stays active. It’s just honest work, keeping the oil hot and the food moving out the door to whoever is waiting at the counter.
