We set up shop in Vaishali, specifically at units 209-210. It’s a decent-sized space for what we do. Most of the time, the kitchen is full of steam from the big pots of water. We focus on noodles and some other basic stuff that people like. It’s not a fancy restaurant with tablecloths or anything like that. We just have simple tables and chairs for people who want to eat quickly. The lunch hour is usually our busiest time because of the people working in the nearby buildings. We spend the morning chopping vegetables and getting the sauces ready. Sometimes the delivery apps go crazy and we have five drivers waiting at the door at once. That gets a bit stressful, but we just handle one order at a time. The neighborhood is mostly residential, so we see a lot of the same neighbors coming in for dinner. We try to keep the place tidy, but when it’s busy, things can get a bit messy for a while. We aren’t trying to be anything we’re not. It’s just a place to get some food and move on with your day. The stove gets really hot, so we usually have a fan going in the back. Vaishali is a good spot to be in, and we’ve gotten to know the other shop owners around here pretty well over the months. It's just simple cooking for people who live and work nearby.
