Perfect Flavours

We have got three shops here, numbers 3, 4, and 5 in Sector 82. It is right near the Pop Puri Pranayam place which most people in Faridabad know. Having three units side by side makes things a bit easier for storage and cooking, but it also means three times the cleaning every night. Every morning starts with opening the heavy metal shutters and dragging the bins out to the curb. The area around Sector 82 is growing fast, so there is always some construction noise or dust in the background. We spend a lot of time in the back prep area getting things ready. It’s not a very big space but we make it work with what we have. Usually, the air smells like spices and fried oil by ten in the morning. We don't really have a front office, just a small wooden counter where we handle all the business stuff. The tiles on the floor are a bit chipped in places from moving the heavy fridges and stoves around. We try to keep things organized but when it gets busy, papers and bills end up everywhere on the desk. It’s just us working here, trying to get the orders out on time for the customers. Sometimes the electricity goes out and we have to mess with the generator which is always a noisy hassle. It is a simple setup, nothing like those polished places you see in the malls. We are just a local shop.
