We operate out of a house in Sector 29, specifically H.N.-1561. It’s more of a kitchen setup than a traditional restaurant. Most of our work involves prepping ingredients early in the morning so everything is ready for the day's cooking. Faridabad can be a bit chaotic, but this sector stays relatively calm. We started this because we liked cooking, and now it's just what we do every single day. The floor is usually a bit slippery from cleaning, and the smell of spices is always in the air. We don't have big signs or fancy lighting. It’s just us back there, chopping vegetables and making sure the pots are boiling. Sometimes we run out of something and someone has to rush to the local market to grab it. That’s just how it goes when you’re running a small food business. Our team is small, mostly people from the neighborhood who know how to handle a heavy pan. We don’t spend money on marketing; we just rely on the fact that we’ve been here for a while. It’s hard work, standing on your feet for ten hours, but it pays the bills. We just keep our heads down and focus on the food. It’s not always easy, but it’s our life. We’ve had some long nights when big orders come in, and we all just pile in to get it done. The kitchen gets cramped, but we make it work somehow. It’s just a lot of cooking and cleaning.
