Malabar Foods

Down here at Mayur Vihar II, specifically at G -9, things stay pretty busy. Malabar Foods isn't a huge place, but it keeps us on our feet from early morning until late at night. The first thing we do is open the shutters, which always make a loud scraping noise that the neighbors probably don't like. We spend a lot of time in the back prep area. There’s usually a big pile of onions that needs chopping and the smell of spices gets into your clothes by noon. It’s just how it is. The floors need sweeping every couple of hours because people bring in dirt from the street on their shoes. We’ve got a small team here. Most of us just live a short bus ride away from the shop. The counter is a bit worn down where people lean on it while they wait. We don't have any fancy decorations or anything. Just the menu on the wall and some chairs that have seen better days. When the rush hits, it gets hot in the kitchen, and everyone is moving fast. We sometimes run out of things by late evening if it’s been a busy day. It is a simple setup. We focus on getting the food done and making sure the containers are closed right. Sometimes the delivery guys are waiting outside and we have to tell them to be patient. It’s just regular work in a regular part of town.
