Morning Bake

Morning Bake is out at Khasra No.899 in the Lal Dora area of Rithala. We start our work very early, usually while it’s still dark outside. That’s just the way it goes when you’re dealing with bread and baked goods. By the time most people are waking up, we’ve already been at it for hours. The air in here is always thick with the smell of flour and yeast. It’s a small operation, really. We don't have a lot of big machines, so a lot of what we do is by hand. The floors are always a bit white from the flour, no matter how much we sweep. We’re just a group of people who know how to bake and we’ve been doing it at this same spot for a while. The building isn't much to look at from the outside, but it gets the job done. We don't really do much advertising. People in Rithala know where we are if they need us. Sometimes the ovens act up, or the delivery is late, and we just have to figure it out on the fly. It’s not a glamorous job, and your clothes always end up smelling like a bakery, but it’s steady work. We just focus on the daily bake and making sure we have enough for the morning rush. It’s a simple life and we like the quiet of the early hours before the city wakes up and starts moving.
